I have a 35 year old house and will be spraying foam insulation to the outside of the house. I have removed the siding, forences down to the black particle board / sheathing.

After spraying 2.5 inches of insulation do you still install Tyvek onto the frame and sheathing and then install siding?

Yes that is the correct way to close in the envelope. 3" of foam would be better, but if the vapor barrier is in good shape then 2.5" is fine for the R-value.
