I have bathrooms that I would like to renovate approx 8x7. The renovation only requires to replace the floor and shower tiles. How much should that cost if supply the tiles? I have been receiving outlandish quotes that when calculated the contractors are charging more than doctors and lawyers.

Should be in the @2000 range depending on tile design.

Keep in mind that there is a difference between replacing and installing. Installing costs are straight forward. Replacing can be tricky. When removing old tiles the backer board will most like need replaceing. In the shower the backer board should be waterproofed if done properly. Removing old floor tiles can lead to replacing old rotten sections of flooring. Does the contractor carry insurance and will they warranty work? In my personal option you want a contractor who charges like a doctor. They are more often than not the best.

Depending on the age of the home and time the tile has been on the walls replacement of of the walls and membrane would be recommended. In Nova Scotia a project including: drywall, mud/tape, kerbi membrane, tile, new baseboard etc...apx $2000 - $2500.
