Am I able to cut the side of the stairs to expose each step or will it affect the integrity of the staircase?

You do not want to cut the stringers of that staircase as that is structure and the stairs will fail and someone can get hurt. I strongly do not recommend you doing so.

These are two types of different staircases. The one you want is called an open stringer, the other, that you have, is a closed stringer. Both are made differently. The open stringer has the structural support from underneath. The closed is structured on the side. You can't create an open stringer from a closed unless you restructure the staircase.
So, to answer your question: NO.

I highly recommend against cutting the side of your stairs. This will affect the integrity of your staircase. The stairs you presently have are designed and built differently from the one you desire. If you are trying to achieve a more open airy feel to the stair case i suggest, glass, It is beautiful and at least we know you will be safe.
It's possible to convert from closed to open but is not worthy the cost and also is NOT a Diy job.
So hire a professional to remove and make another staircase for you according to your desire.
