Is it better to do this all at once? How much should it cost to run hardwood throughout, including up the currently carpeted stairs, and change from a drywall low wall railing to an open aluminum or metal rail system? Would it be better for once person to handle this or should we hire separate 'specialists'?

Always cheaper to do all work at once and by 1 really good general contractor who hires the experienced subs and suppliers...piece work will cost more and be more stress for you not to mention take twice a slong.
