My contractor and I fear over the due date of six months as a bank is going to be involved.

What would be legal to make sure he still gets paid fair if he were to exceed the six month mark? And what would we stipulate in his contract for such an occurrence?

Definitely a question for a lawyer. A contractor can't accurately answer this question, and to make sure the contractor gets paid...a lawyer should definitely be consulted. Nobody likes paying lawyers, but in this case it's the only way to know you are covered.
