I'd like to replace a carpeted living room with laminate flooring. It's about 300 square feet. Aside from the materials (laminate, underlayment, t-molds, etc), how much would the labour typically cost?

You should be in around the $2.00 per sq ft mark and that would not include any prep work or stairs.

On average a job that size should take a half a day if it is a straight forward install and the product is good quality.

going rate is typically from $2/sqft basic install + expect extras if floor needs underlayment, leveling etc.
