Any business that does work in other peoples homes or commercial units should have a professional designation, WSIB, HST, and government issued number.

I am not familiar with Ontario code and regulations. Please feel free to reference the following link or call a local trade office in Ontario where the work is being performed.

Yes. Please refer to the Ontario college of trades website.
I'm in Alberta. The Rule of Thumb is if you make a "Change" to the plumbing system. You need to be licensed and have it inspected. An inspector once explained this.. IF you have a kitchen sink with double basin. Then you change the piping to accommodate a garburator then you're required to pull a permit. This was in Calgary. A NW Quadrant inspector. Do All Companies pull a permit for a small change like that? likely not. I would however 100% Carry insurance! Water is Never Forgiving! Good luck with you're business! PS Appliance Installers are usually not licensed plumbers some are but most are just trained how to install add on valves etc. The companies they work for EG Appliance R US usually just have a business licence for selling and installing appliances etc. They will sometimes require to be bonded as they go in to people's homes eg criminal checks etc. Calgary Contractor licenses include criminal checks as part of the licensing process.
Kinda Vague but i hope that gives you an idea.
