So I've been doing some research on permits and codes for a seasonal cottage and from what I have read you pretty much don't need any permits for doing any work essentially does anyone know more about this?

In Alberta you do and it's safe to say it it would be no different in any other province. There are no exemptions given for things like insulation values even if it's only for seasonal (summer) use. I did inspections for all the Summer Villages around Alberta Beach; it was a challenge closing files which would go on forever with nobody ever around.

I am not sure where you got this information but this is not true. You need a building permit from your local municipality for any project that exceeds 10m2. In terms of renovations, you need a permit if you are altering your building shape, openings, adding or demolishing a structure.

Well this seems to be untrue as I have contacted the building department and they informed that insulating and drywall do not need permits as well as if you look in the OBC section 9.36 exclusions
A cottage is no different than any other structure built in Canada, think of it as a tiny home. You will need all trade permits (elect, plumbing etc) as well as a development permit and a building permit. The internet is worst place to get actual information on compliance's, go to your local building and development office with you property info and building plans to obtain the actual requirements they demand.
