In retileing a shower from the 1960's should you demo and redo the shower pan? How about the original plaster walls? Is it okay to just pull old tile and lay new tile over? Any direction is appreciated.

I would suggest redoing the entire shower. The primary reason would be to eliminate any chance of rot or mould that may be in the floor or walls. It is not a good idea to cover up old with new. It's your dwelling but also your health that should be considered. Do it properly and you'll be happy.

When you remove the tiles it's likely you will damage the plaster. Better to just remove it all and go with Dense Shield or cement board. Again, I would use Schluter to waterproof the shower area.
And like Mark said, you ca see what's inside the walls.

I agree with everybody else. If the tile comes off the wall easily enough to not compromise the plaster (drywall I assume), then there likely has been moisture inside softening the board. The old drypacked bases were a pretty good system for the time, but often fail after awhile. If you are spending the cash and effort to redo the shower,do it top to bottom - consider replacing shower valve as well. This is the opportunity to be proactive and invest in something to use for many trouble free years. Short-cutting could compromise you down the road.
