What type of Contractor would I need to locate the source of several small water stains along the outside edges of my wall as well as during the really cold months I have a high humidity problem that causes major condensation on all my energy efficient windows & doors?

I would suggest an experienced general contractor with a good reputation.
There could be a number of factors:
1) condensation forms when there is a fluctuation in temperatures (not enough consistent heat, especially for each window). Forced air ductwork usually runs 1 vent for every window.
2) poly needs to be run on the warm side of framing with poly on the warm side as well, insulation behind. In some cases people have put poly between two heated spaces creating condensation.
3) poly could be doubled 1 layer on each sode of the wall trapping moisture.
4) There could be a slow plumbing leak. This could be because of many different issues.
5) If too many people are living in the house and taking showers, you will have a humidity problem, and need proper venting.
These are some issues you might need to look into. But if the problem is not dealt with, you will have mold issues and further damage over time to your health and your house.
I would have a mechanical contractor review your furnace and humidity/dehumidifier equipment. Do you have an ERV? My rule of thumb is to keep the relative humidity between 30 and 40%. Buy yourself a relative humidity gauge - I bought one from Home Depot for less that $5 and they are fairly accurate.
