I have a small water stain in my closet which seems to be getting bigger and bigger as time goes by. I would think the dry wall would need to be cut to allow for whatever is leaking to be fixed. Who do I call do deal with the drywall and the leak?

Just cut drywall by yourself and take look at the leak after find out the reason as a plumbing issue or something else, you can ask a plumber and other trade to finish the job.
It depends what's above that sealing the attic and roof or a second floor where there's a water pipe?? I strongly recommend you calling a trusted Pro in your local neighbourhood

The best is to use a contractor that has Water Restoration license. Any improper repair might lead to mould growth and more serious issues.
You can either talk to your insurance provider to adding their ordered contractor or you can use your own contractor that does that type of repair.
