Is it okay to put sheet rock lateral instead of horizontally on a remodel of a small room?
There's nothing in the Code that requires gypsum boards to be placed horizontally (also no orientation requirement for ceilings). However if the wall is long it's normally best to stick to horizontal and also use 10 or 12' lengths with offset joints. Drywall is available in a 54" width if you have taller walls.
Yes you can no problem. The benefit for going horizontal though is it can help take the waves out of the wall on older and new homes.
Yes it is, but if it's not done properly the groves will crack. Your taper has to do an excellent job.
