What is a handymans rate per hour? Does it vary according to the trade? For example, what if he is installing a vanity which includes woodwork and plumbing?

Please keep in mind that the previous 3 responses were posted by out of province companies. Prices can vary from township, let alone province. The following is what you can expect to pay in the G.T.A.
Low end (regrets are free of charge) $40/hr
Mid range (if you like to gamble) $50/hr
Average (safe zone) $60/hr
High (hey, it's your money) $70/hr+
Keep in mind these rates cover one man with truck/tools. If a second body is required, expect to add another $20 - $50/hr

James is right on.
The range depends on what risk you want to take. Licensing, Insurance and Quality not only of the work but of your experience with them is worth every extra dollar.
In Edmonton $50-65 is a fair range to expect for a self employed handyman with $70-80 for a secondary company who contracts out the handyman work but works to maintain customer experience.
